I had the pleasure of working with Chef Brent Potuszynski at a few different venues. A lovely guy who always snuck an octopus dish into his menus. It’s one of his bulletproof menu items that was honed to perfection and would appear from time to time in different styles and with different ingredients. My advice; if you see one of these dishes on a menu by Brent. Try it. It’ll be some of the best octopus you’ve tasted.
